Whip It Up Wednesdays – Shweta’s Vegetable Fried Rice


This Whip-it-up-Wednesdays we bring you a wholesome meal that you can make with your favorite ingredients – Shweta’s Fried Rice. Mix and match to make the perfect dish that you will love!
We all love Indo-Chinese cuisine. Fried rice is a popular and common dish cooked with rice and vegetables/ eggs/ seafood/ meat. It can be served alone by itself with some sauces(schezwan / sweet chilli/ sweet garlic) or along with some Chinese gravy dishes like Manchurian, Chilli paneer, etc.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Yield: 4 servings(4 Quarter Plates)
Ingredients:
A. To Boil Rice
1. Two cups white rice
2. Eight cups water or as required to boil rice
3. One teaspoon oil
4. Half teaspoon salt
B. For Vegetable Fried Rice
1. Boiled rice
2. Two tablespoons oil/butter
3. Five garlic cloves (finely chopped)
4. Half medium size onion (finely chopped)
5. Quarter cup green peas
6. Half cup green beans (finely chopped)
7. Half cup bell pepper (finely chopped)
8. Salt to taste
9. Two teaspoons soy sauce
10. One and a half teaspoons vinegar
11. Half teaspoon black peppercorn powder
12. Spring onions to garnish
Instructions:
A. To Boil Rice
1. Take rice in a large bowl and rinse it with water three times
2. Soak rice in water for ten minutes
3. Take eight cups of water in a pan over medium flame
4. Add drained soaked rice to it
4. Add oil and salt to it
5. Cook for ten minutes or until rice is fully cooked
6. Once cooked, drain off the water from rice
7. Pour some cold water over the rice to cool it
B. For Vegetable Fried Rice
1. Take a large saucepan over a medium-high flame and add oil/ butter in it
2. Add garlic and stir fry for one minute
3. Add onion and saute for two minutes
4. Add peas, beans, bell pepper and mix well
5. Add salt and saute for two minutes
6. Add soy sauce, vinegar, black pepper, and cook for two to four minutes. Do not fully cook the vegetables.
7. Add boiled rice and mix well.
8. Switch off the stove and garnish with spring onions
Tips:
1. You can add more vegetables of your choice like carrots, corn, cabbage, etc. or add your favorite sauteed meat, chicken, seafood, or eggs before adding rice.
2. Do not fully cook or overcook the vegetables. Crunchiness in vegetables taste good in fried rice
3. Rice must be cold before adding it to the vegetable. This will prevent the rice from breaking while mixing.
4. To make it spicy, you can add chopped green chilies, red chili flakes or chili sauce
