Nuts And Chivda Namkeen For A Quick Easy Snack

Nuts and Chivda Namkeen is a quick and easy snack with a balanced flavor of sweet and salty. This week on Whip-it-up-Wednesdays make this simple snack with poha (flattened rice), dry fruits, peanuts, and spices. A little healthy tea-time snack you can make at home.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Yield: Six servings
Ingredients:
- One cup of peanuts
- Two and a half cups thick white Poha (flattened rice)
- Half cup of cashews
- One tablespoon roasted split gram
- Ten curry leaves
- Four garlic chopped
- Two teaspoon mustard seeds
- Salt to taste
- One and a half tablespoon sugar
- Half teaspoon of turmeric
- A quarter cup of Raisins
- Two tablespoons Ghee
Instructions:
- Take a thick bottomed pan over a low flame and add poha to it.
- Dry roast poha for six to seven minutes and keep stirring in between
- Once the poha change their texture and become crisp, remove the poha in a plate to let it cool
- Take pan over medium flame and add one tablespoon ghee in it
- Add split gram, peanuts and cashews in it
- Stir fry until they are crunchy
- Remove them in a plate and keep aside
- In the same pan add one tablespoon ghee
- Add mustard seeds and saute for 30 seconds
- Add garlic and curry leaves, and saute for about 30 minutes
- Add turmeric, salt and sugar, mix well
- Add stir-fried nuts (split gram, peanuts, and cashews) and mix well
- Add roasted poha and mix well
- Add raisins and mix well for a minute
- Switch off the stove
Tips:
- Do not roast on a high flame as the poha will get burnt or browned and break
- Instead of a dry roast, you can also fry the poha as per your taste
- If you like your chivda spicy, add a half teaspoon of red chili powder
