Vegan Thukpa Recipe To Take Care Of Your Winter Woes


A bowl of healthy, soupy goodness is a great way to wipe away the winter chill that sets inside us. This vegan Thukpa is a fragrant and hearty noodle soup popular in Nepal, Tibet, Bhutan, and some parts of India. This satisfying soup is perfect for those winter nights where you just want to stay tucked in bed with a large bowl of soup enjoying your favorite shows.
Preparation Time: 15 minutes
Cooking Time: 20 – 25 minutes
Yield: 4 servings
Ingredients:
1. One cup of boiled noodles
2. Two teaspoon garlic (chopped)
3. Two teaspoon ginger (chopped)
4. Three green chilies (slits into halves)
5. One cup sliced onions
6. Half teaspoon turmeric powder
7. One teaspoon garam masala powder
8. Half teaspoon red chili powder
9. One cup chopped tomatoes
10. One cup chopped green spring onions
11. Two cups bell pepper mix (julienned)
12. One cup carrot julienne
13. Three cups of water
14. Salt to taste
15. One tablespoon olive oil
16. Two teaspoons fresh lemon juice
17. Cilantro to garnish
Instructions:
1. Take a pan, add noodles, salt, and one teaspoon oil
2. Simmer until the noodles are tender, takes about six to ten minutes
3. Strain the noodles and run under cold water then keep aside
4. Take a saucepan over a medium-high flame and add oil to it
5. Once the oil is hot enough, add garlic and ginger and saute for one minute,
6. Add onions and green chilies, saute for one minute
7. Add turmeric powder, garam masala powder, red chili powder and salt saute for one minute
8. Add tomatoes and cook until tomatoes are soft
9. Add green spring onions, bell pepper mix, and carrot, cook for three minutes
10. Add water and let it simmer
11. Once it starts boiling add noodles and cook for three minutes
12. Add lemon juice
13. Switch off the stove, garnish with cilantro and serve hot
Tips:
1. You can adjust the water consistency as per your preference.
2. You can add chicken, meat, or fish to this Thukpa for the non-vegetarian version.
